Finding out how to bake or make crustless bread

Bread without a crust.


No maillard reaction ?


1 Decreasing the crust.

2 No crust at all
-1 Maybe another heating method. Maybe even with steam or something
-2 Maybe slower heating and low heat, just high enough temperatures
-3 Maybe another recipe
-4 Maybe a full case around the bread
-5 Maybe by smearing something on the bread
-6 ?
